To create a new database in Notion with the Board view, first type /board in order to easily create a new database with a Board view:

Once you create a new Board view, the newly created Board view will ask you to select a data source. In the bottom left corner, select the + New database option:

The newly created database will have three columns: To-do, In Progress and Complete:

A database is like a table of elements that can have different properties. When you create a “Board view” in Notion, that Board is just another way to view your database. A Board view separates database items into columns, based on a property of your choice.

So in this case, the Board view is grouped by the Status property, which has three values: To-do, In Progress and Complete. This is why you see three columns in this Board view.

If you would like to change the columns in this Board, you should change the way the Board is grouped. First, you’ll want to create a new database property and then group the Board by that property.

You can edit the database by clicking on the three dots symbol ... on the top right corner of the database:

Then you will see some options to edit the board:

Click on Properties to edit the Board’s properties. Then click on + New Property to add a new one:

Then you can decide on the name of your new property, and choose its type. Here, I set its type to be Select:
